Do-nut even get me started on my recent craze over all things DONUTS.

A few years ago when I first bought a donut pan, I questioned my impulse decision after ordering. I didn’t think I’d actually ever use it and now I find myself using this pan so much, I want to buy more so I can make bigger batches of donuts and bagels!

This is healthy spin on the classic cinnamon sugar donut.

It is a basic and very simple recipe to make and will take all of 15 minutes start to finish to whip them up. I love that they are sweetened with a little coconut sugar, have unsweetened applesauce in them for that moist consistency and I even snuck in some Vital Proteins collagen when I made them. The first time I used their collagen creamer (so good) and the second time I used the collagen peptides since it is all I had on hand.

I love sneaking in Vital Protein’s collagen into random recipes as you guys know. It adds more collagen and protein to a recipe and it doesn’t bulk it up or anything like your usual protein powder. It dissolves right in the batter when you bake with it (more on collagen here).

The consistency of these donuts is my favorite. They are perfectly cakey and not too heavy. I personally find some healthier donuts pretty dense but these aren’t at all. They are also egg-free, nut-free and gluten-free so very allergy-friendly. So for all my friends out there looking for something to please anyone, here ya go!

Gluten-free Baked Cinnamon Sugar Donuts that are vegan, nut-free and ready in less than 15 minutes!

  • Total Time: 17 minutes

Yield: 10-12 donuts 1x

Ingredients

Scale

Donuts:

  • 1/3 cup unsweetened organic applesauce
  • 1/2 cup non-dairy milk
  • 1 tablespoon liquid coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup gluten-free oat flour (or sub gluten-free all purpose flour)
  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

Cinnamon sugar coating:

  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees and grease a donut tray with coconut oil
  2. Mix together the applesauce, milk, oil and vanilla
  3. Add in the flour, sugar, baking powder and cinnamon and mix until smooth and creamy with no clumps
  4. Spoon batter into donut pans then bake in oven for 12 minutes or until ready
  5. Allow the donuts to cool for a few then gently remove
  6. Mix together the cinnamon sugar coating then dip each donut into it and enjoy!

Notes

*Will stay good in airtight container for 3 days, or in fridge for 1 week or freezer for 2 months

    How do you get the cinnamon and sugar to stick to the donut?? The donuts came out AMAZING, but I couldn’t figure out how to get the coating to stay…

      mine stuck well just from dipping! it may absorb into the donut but that is okay 🙂 you will get the sweetness! xx

        Cinnamon mixture totally does not stick 😌 would work better if a little coconut oil was rubbed on top. Picture of donuts is very deceiving!

    Wow – these donuts are SO delicious and easily customizable. I was craving donuts with a peppermint glaze and searched Rachel’s website for a donut recipe with ingredients I had on hand already that I could customize to satisfy my craving. This one fit the bill – I omitted the cinnamon and instead of the cinnamon sugar topping did a peppermint glaze, but would love to try the cinnamon sugar topping next time because I will definitely be making these donuts again and again. The flavor and texture of the donuts resembled real donuts more than I was expecting from a recipe made with healthier ingredients. So satisfying.
